I thought doing tool offsets by hand was good enough, but a messed up run of parts convinced me to use the probe every time.

Hold on! I've done offsets by HAND for years and it's totally fine if you pay attention. Probes can fail or get dirty and trick you into thinking things are perfect when they're not. That messed up run probably came from a simple mistake, not from skipping the probe. Relying on gadgets for every little thing just wastes time and money. Manual checking keeps your skills sharp and that's WORTH more in the long run.
