A barista at a gas station coffee bar changed how I think about pour overs
I was grabbing a coffee at a Shell station in Akron last month and the guy behind the counter started talking about his Chemex setup. He told me he lets his water sit for 45 seconds after boiling before pouring. I always just went straight from the kettle. Tried it at home the next morning and my V60 actually tasted less bitter for the first time in 2 years. It hit different because he wasn't some fancy shop owner, just a dude working a register who cared about the details. Anyone else get a good tip from an unlikely source?

The real lesson here is that great advice can come from anyone who actually does the work, not just from people with certifications or fancy shops. A gas station barista has no reason to fake passion or upsell you on expensive gear, so when they drop knowledge like that 45 second wait, it's pure trial and error from someone who genuinely loves coffee. Kinda makes you wonder how many other hidden gems are out there just waiting behind counters we usually walk right past.
