I finally figured out why my pourovers tasted so flat after 2 years of trying

Last month I was at a shop in Portland and the barista asked if I was using tap water. I told her yeah, straight from the filter on my sink. She pulled out a TDS meter and my water was at 50 ppm, way too low for proper extraction. Turns out my city's filtration was stripping everything out. I switched to Third Wave Water packets and the difference was night and day in like 3 days. Has anyone else run into water issues that killed their coffee flavor?

Honestly, is tap water really that big of a deal?

Oh man, @margaretrivera, it's one of those small things (like how we just accept whatever comes out of the faucet) where nobody stops to question what's actually in it.
