I used to think cold brew was just weak iced coffee
For years, I stuck to my hot pour-over and dumped ice in it. My friend in Seattle kept telling me to try real cold brew, steeped for 18 hours. I finally made a batch last week with some Ethiopian beans. The taste was totally different, way smoother and less bitter than my usual method. Has anyone else had a drink they were wrong about?

Oh man, that's not even close. Cold brew is a totally different process that pulls out way less acid. It's why it tastes so much smoother.
