Just caught myself using stale beans for 6 months straight
I had this whole routine down where I'd buy a big 5lb bag of beans from the grocery store and it would last me like 2 months or more. Then last week my buddy stopped by and made a pour over with some beans he just roasted 3 days before. The flavor difference was so huge I couldn't believe it. I went home and checked the roast date on my bag and it was from 4 months ago. Now I'm only buying from a local roaster who stamps the date on there and I'm trying to use them within 10 days. Has anyone else been drinking bad coffee without knowing it for that long?

I read somewhere that coffee grounds lose like 60% of their flavor compounds in the first two weeks after roasting. That kind of blew my mind because I figured beans just stayed good for months in a bag on the shelf. Once I did the math on how much stale coffee I went through, I felt pretty dumb too. It's wild how much better fresh roasted stuff tastes even with the same brewing method. Now I'm one of those weirdos checking roast dates on everything.
