Poured my first cup at 4am for 6 straight months before a roaster in Portland asked one question
Back when I started drinking coffee I thought bitter was just how it tasted, so I loaded up the drip maker with 3 scoops and chugged it black for 6 straight months. Then a roaster at a shop in Portland asked me what temp my water was and I said boiling, obviously, and he just kind of looked at me funny. He handed me a cup brewed at 200 degrees and it was sweet, like actual fruit, and I sat there feeling like a total idiot. Turns out I was burning the grounds the whole time and blaming the beans for it. What was the one thing you did for way too long before someone casually pointed it out?
Oh man, the water thing got me too. I used to just fill the kettle, hit boil, and dump it right in, and my coffee always tasted like burnt toast. Nobody told me anything for like two years. Then my roommate saw me doing it and was like dude, you're cooking it. I bought a cheap thermometer the next day and it changed everything.
