That coffee cupping in Portland last month changed how I brew at home

I went to a cupping at this roastery in Portland called Heart and they had us taste 4 different roasts of the same Ethiopian bean. It totally showed me how much the roast level changes the flavor profile. Has anyone else had a cupping or tasting that made you rethink your daily routine?

Heart's cupping sessions are great but what really changed my routine was learning how water temp interacts with roast level... a lighter roast needs hotter water than people think.

Nuked my first pour over with boiling water on a light roast. Tasted like I brewed it in a campfire.
