Appreciation post: Eastern Market changed my mind about local sourcing
I used to think buying local produce for my cafe was just a trendy markup. But I visited Eastern Market last Thursday and talked to a farmer who grows mushrooms in a repurposed warehouse on Gratiot. He showed me his prices were actually 15% cheaper than my Sysco order for better quality. Plus the turnover is insane fresh he picks orders same morning. I switched 3 of my menu items to his stuff and customers are actually noticing. Has anyone else found a local supplier who changed how you run your business?

Ha! So you're telling me the secret to better food was just... talking to the actual mushroom guy and not a spreadsheet? Love when reality smacks a good business opinion right in the face.

Did you see that report about chefs getting better results from actually visiting farms instead of reading supply chain reports?
