Overheard a guy at Eastern Market saying he pays his dishwashers $18 an hour to start

That's more than I pay my line cooks and now I'm wondering if I'm the one who's got it backwards on turnover.

Honestly I think people get way too worked up about one random guy at a market saying what he pays. It could be a total one off thing or maybe he's lying to look good. Even if it's true, $18 for a dishwasher in a busy city market doesn't mean every place has to follow. You gotta look at your own numbers and what works for you. Turnover stinks but throwing money at it isn't always the fix either.

Raised my starting wage by a dollar and it cut turnover in half.
