The mud on this old house in Tacoma went from perfect to cracked in a single afternoon.
We skimmed a whole wall with 20-minute hot mud, left for lunch, and came back to a spiderweb of cracks. The homeowner had cranked the heat up to 80 while we were gone. What's the fastest setting compound you'd trust for a similar patch job?

Man, that's the worst feeling... watching a fresh skim just self-destruct. Been there. What a bummer about the heat getting cranked. For something that needs to set fast but not crack, I've had okay luck with the 45-minute stuff in a pinch. It gives you a little more working time than the 5-minute, but it still dries hard before the environment can really mess with it.

Ugh, @aaron896, that reminds me of the time we patched a ceiling in a sauna, well, a really steamy bathroom.
