Can we talk about how a neighbor changed my mind on airlocks?

My neighbor in apartment 4B said she just uses a clean cloth and rubber band for her kimchi, and after 5 batches, I'm ditching my fancy setup. Has anyone else gone back to basics like this?

My uncle in Florida ferments his hot sauce in old pickle jars with plastic wrap lids. Works every time.

Toss an old pickle jar with a cloth cap like @tylergrant's uncle does, way less fuss.
