Dropped $80 on a fancy pH meter and it's been a total game changer for my hot sauce ferments.

Before I was just guessing and half my batches would go funky, now I know exactly when it's safe to bottle. Anyone else using one or still flying blind?

Ever notice how a lot of DIY stuff goes from stressful guesswork to actually fun once you get the right simple tool? It's like that with so many things, not just fermenting. People will struggle for ages with a cheap tape measure or a dull knife before buying the one good thing that makes the whole job click. That meter probably feels like a cheat code now.
