Fermented carrots became my unexpected stress relief

I started eating them daily last month. My anxiety has been much lower, which I wasn't expecting.

Totally get this. Started adding sauerkraut to my lunches and my mood feels way more steady. Something about the tang just hits different.

Honestly it could just be the placebo effect. People want to believe a simple food fix will solve everything. Your mood might feel steadier because you expect it to, not because of bacteria. The tang might just be a strong taste that distracts you. There's not enough solid proof for me to buy into the whole gut-mood link. It's probably just a coincidence.
