Seventy-two hours in a Phoenix garage? That's brave. I'd be scared of creating a science experiment, not a hot sauce. Sounds like it paid off, though.

Wait, you guys actually did a science experiment on purpose? I used to think hot sauce was just about dumping peppers in a bottle and hoping for the best. But then I tried a batch my buddy made with fermentation and pH strips and all that, and I totally changed my mind. There's way more to it than I ever gave credit for. Now I kinda want to get into the science side myself, just to see what happens.
