Why does nobody talk about how fermentation slashes food waste?

I began fermenting my garden leftovers to save money. Now I have less trash and more tasty snacks. But my friends still toss out edible food every week. It's so frustrating because this is an easy fix. We could all make a difference with just a few jars.
