Hit 225 degrees on my offset smoker and the bark was PERFECT
I was messing around with a brisket last weekend and decided to push my firebox temp to 225 instead of my usual 200. My bark came out so dark and crispy I almost cried. Has anyone else found that a slightly higher temp on an offset gives way better results?

225 degrees is just a normal temp, man. People act like they cracked some secret code when they run their offset there instead of the standard 200. I have had great bark at both temps, it's more about how you manage your fire and airflow than the exact number on the gauge. Getting emotional over bark seems a bit much. You sure you didn't just nail the fire management this time around?

Fire management is definitely 90% of it, but that extra 25 degrees pushes the fat rendering just enough to tighten that crust without drying things out. I had a buddy switch from 200 to 225 and finally got the bark he was chasing, all because his airflow couldn't keep up at the lower temp. Have you tried bumping your coal bed size to compensate when you sit at 200?
