I finally messed up a whole pork shoulder because I trusted the thermometer on my new smoker

Set up my WSM at my buddy's place outside Memphis last Saturday for a 12-hour cook and after 8 hours the probe said 195, but when I pulled it off and sliced in it was barely past 160 in the middle, so now I'm using a Thermapen every time now, anyone else ever get burned by a built-in probe being way off?

Man it's crazy how we trust bad tools til they ruin something good.

Oh my goodness, that really hit me. I still can't believe I trusted that old electric blanket for so many years even after it started getting these little hot spots. One night it literally started smoking while I was asleep and I woke up to the smell. Thank God my smoke alarm worked because I had to throw the whole thing out the window. I was so upset with myself for not replacing it sooner when I first noticed something was off.
