What made you decide to skip the wrap entirely?

Wrapping is the only way to get that perfect tender texture without drying it out. Going unwrapped the whole time just gives you a tougher piece of meat. The Texas crutch exists for a reason, it keeps all the moisture locked in when the stall hits. You get a much more consistent cook and it finishes way faster. Skipping it is a good way to end up with a dry brisket.
