Just saw a video where Tuffy Stone explained his brisket trimming philosophy
He said he aims to remove about 25% of the raw weight before it even hits the smoker. Found that on a YouTube channel called 'BBQ with Franklin' from a few years back. How much do you guys usually trim off?

My buddy tried that exact method last weekend. He ended up with way less meat than he planned, said it felt like throwing money straight in the trash. He's back to just taking off the obvious hard fat now.

Sounds like your buddy went too far. Gotta know where to stop trimming. The sweet spot is getting the big chunks of fat without cutting into the good meat. Takes a little practice to see the line.

@felix155 nailed it with the trimming line thing. My neighbor did the same thing once, got too aggressive shaving off what he thought was waste and ended up with a sad little pile of meat. Felt bad for him, all that work and you're left wondering where the rest went.
