My uncle said to wrap my brisket in foil after 4 hours, not butcher paper
I did it for my last cook and the bark turned out way too soft, almost steamed. He swore by it for years but I think I'm sticking with paper from now on. Anyone else have a family member give them bad bbq advice that sounded legit?

So your uncle's been doing foil the whole time? Man, that's a perfect way to steam it like you said. I gotta ask, what's his reasoning for it? Like, does he think it keeps more juice in or cooks faster? I'm just curious what the old-school logic was behind that move.

My uncle's whole thing was about keeping the meat from drying out on his old charcoal grill. He'd say the foil trapped the heat and steam so it cooked in its own juices. Honestly, I see that same logic everywhere now. People wrap their phone chargers in a specific way, or park in the exact same spot at work. It's less about the actual result and more about finding a method that feels safe and controlled. Once someone lands on a system that works okay for them, they just stick with it forever and build a whole story around why it's the best way. The foil is just his version of that.
