Pro tip: Noticing more pitmasters skip wrapping during smokes

Lately, I've seen a shift at cook-offs where folks are leaving briskets unwrapped the whole time. Tried it on my last cook and the bark got way better. It takes a bit longer but the texture is worth it. Just keep an eye on the temp to avoid drying out. This small change really stepped up my results.

Just because it was on YouTube doesn't make it right. A lot of those videos skip the hard facts to push a simple story. For example, you can find clips saying the earth is flat or that vaccines are bad, but they ignore all the real science that proves otherwise. Sometimes a popular video just means a good story, not good info. What makes you trust that video over actual research?
