The weekend I cooked 80 pounds of brisket and got rained out on Saturday

I had 4 briskets going at once for a family reunion and then a storm blew in at 3 AM, soaking my charcoal and knocking over my offset smoker. Has anyone else had to pivot mid-cook like that and somehow still salvaged the meat?

Man that reminds me of a buddy of mine who had his entire pit fall over in a windstorm during a charity cook. He ended up digging a hole in his backyard and threw the briskets in there wrapped in foil with hot coals from his fireplace. It actually worked, the meat came out tender just took way longer. I think a lot of folks forget that you can improvise heat sources if you have to. Like wrapping everything tight in foil and burying it in hot coals or even using a clean metal trash can as a makeshift oven if your smoker goes down. The key is keeping that internal temp steady no matter what you use. So if your charcoal got soaked maybe try a propane grill on low with some wood chips in a foil packet for smoke, I've done that in a pinch and it turned out fine.
