Unpopular opinion: I stopped wrapping my ribs in foil after a competition in Memphis
I saw a pitmaster just let them ride on the smoker the whole time, and the bark was way better. Anyone else skip the wrap for a more solid bite?

That Memphis humidity does something wild to the bark.

Remember my buddy who tried to grow a Japanese maple here? Yeah, @noahjenkins, that tree looked great for a month. Then the bark got all soft and spongy, like wet cardboard. He said it just started peeling off in long strips. Had to dig the whole thing up.

Yeah, that no-wrap method is the real deal for bark. The key is keeping the temp steady around 250 and using a water pan for humidity. Spritz with just apple juice and water if the surface looks dry.
