Unpopular opinion: Low and slow is overrated for pork shoulder

I got into an argument with a guy at a comp in Austin last year who swore by 275f for his shoulders. I always thought that was too hot and would dry it out. But I tried it on a 9lb butt at home and it came out just as tender with a way better bark. The collagen broke down fine and it only took like 6 hours instead of 12. Now I'm wondering if we all just repeat what we heard about 225f being the only way. Has anyone else tried bumping up the temp and gotten good results or am I just lucky?

Wait you actually got a better bark at 275? I always thought that was heresy. Did you wrap it at all or just let it ride bare the whole time? I'm honestly shook because I've been doing 225 for years like a sheep.

No wrap, just let it ride - you really think wrapping kills the bark that much?
