Appreciation post: The $3 bag of lentils that saved my week

I had to choose between buying a single pre-made salad for $9 at the deli or grabbing a bag of red lentils for $3. I went with the lentils, boiled them with some garlic powder and an old carrot, and ate it with rice for three days. It was actually pretty good and kept me full. Anyone have other cheap ideas for a single person that don't involve beans?

But what about the time cost? Boiling lentils and rice for three days straight sounds like a lot of work for one person.

Ever tried a pressure cooker to cut that time down?

Pressure cookers are a total game changer for stuff like that. My old one broke last year and I went back to regular pots for a week, it felt like a full time job. Getting a new one cut my bean cooking time from hours down to like forty-five minutes. It really does free up your whole evening.
