Had to choose between frozen veggies and canned for my meal prep this week
I went with frozen since they were $1.29 a bag at Aldi and I figured they'd hold up better in my lunch containers. The broccoli did get a little mushy after reheating though. Anyone else have better luck with one or the other?

Wait, you expected broccoli to stay crispy after being frozen AND microwaved twice? Thats like hoping a bath sponge stays crunchy. Frozen is definitely the better deal money-wise but lets be real, by day 3 youre basically eating lukewarm vegetable pudding. Canned stuff holds its shape better but then you get that weird metallic taste that makes you feel like youre licking a penny. Honestly I just accept the mush and pretend Im eating some kind of fancy puree.

I started roasting the frozen broccoli straight from the bag on a sheet pan with oil and salt at 425 for 20 minutes. No microwave, no thawing. The outside gets charred and crispy but the inside stays soft. It's not the same as fresh but it's way better than that soggy microwave mess. Just don't crowd the pan or they steam instead of roast. That one change made frozen broccoli actually worth eating past day one.
