My neighbor's kid said they eat rice and beans three nights a week
I was walking my dog yesterday and my neighbor's son, maybe 12, was out front. He told me their family has rice and beans every Monday, Wednesday, and Friday to save money. He said they just change up the spices or add a cheap veggie like frozen corn. It made me realize how a simple, set plan can really cut down on grocery stress and cost. What other two-ingredient meals do you guys lean on when things are tight?

Pretty sure I've gone full bachelor mode with just peanut butter and bread for a week straight more times than I'd care to admit. That rice and beans kid honestly sounds like he's eating better than me during my "just got paid but already broke" phase. My most creative cheap meal is tuna with mayo and hot sauce, basically trying to convince myself it's actually fancy.

Rice and beans three times a week? That kid is getting a Master's degree in Budgeting before he even hits high school. My go-to cheap meal is just a can of tuna dumped on some crackers, feels like a sad picnic for one. Sometimes I'll get fancy and melt a single slice of cheese on top, call it a "casserole". Really makes you feel the glamour of saving money.

My buddy Dave used to make what he called "struggle stir fry" with half a bag of frozen veggies and whatever cheap meat was on sale. I mean, @tyler_hunt72, your tuna casserole sounds like the same vibe. He'd use so much soy sauce to make it taste like something, you'd be thirsty for a week. It was a whole thing.
