My wife used to buy those pre-made salad kits for $8 a bag
Now we just grab a head of lettuce, a cucumber, and a cheap bottle of dressing for under $3 total. Anyone else ditch the fancy packaging for the basic stuff?

Honestly, that "cheap bottle of dressing" is the real game changer. I used to buy the fancy stuff until I realized how much sugar was in it, which @angelac63 probably gets with her chickpeas too. Now I just mix oil and vinegar with some basic spices.

Try adding a can of chickpeas for extra protein without breaking the bank.

3 cans of chickpeas in my pantry right now because of @angelac63 and honestly my bank account is grateful but my digestion is NOT ready for this much fiber in one week. I tried that oil and vinegar trick too, figured I was being healthy, then realized I was basically eating sour salad with no flavor. At least chickpeas soak up whatever cheap dressing you throw at them, so even my sad homemade vinaigrette tastes decent. My real problem is I keep finding chickpeas in weird places around my kitchen now, like they're reproducing when I'm not looking. But yeah, they're basically the only protein I can afford that doesn't need a mortgage payment.
